High pressure in the cabin + engine noise + altitude will numb your taste buds, so the taste of the food isn't a *huge* priority to the manufacturers.
The food is made on the ground, 10 hours in advance near most airports.
Ideally the food follows IFSA guidelines, so people don't eat stuff that's gone bad.
So /that's/ the deal with airline food!!
